Apple Bacon Quiche Recipe
A complimentary natural, apples and bacon and swiss cheese. Shortcuts are to use a frozen pie crust rather than make your own from the recipe. Nice for a winter afternoon or friendly gathering.

  • **Note for the first 4 ingredients, they can be skipped if using a premade pie dough.
  • 2 ¼ cup Sifted flour
  • 1 ½ tsp Salt
  • ¾ cup Shortening
  • 5 tbl Cold milk
  • ***In lieu of the homemade pie crust use 2 premade pie crusts
  • 5 Eggs
  • 1 tbl Butter or margarine
  • 1 cup Diced Canadian bacon or any good smoked bacon diced
  • 2 cups Thinly sliced apples (red Delicious are good) (unpeeled) Don't use Granny smith or any tart apple, the flavor is not right with the saltiness of the swiss or the smokiness of the bacon or nutmeg
  • 1 tbl Flour
  • 1 ¾ cup Half and half
  • ⅛ tsp Nutmeg
  • ¼ tsp Caraway seeds
  • ½ tsp Dry mustard
  • 1 cup Shredded Swiss cheese
  • or 2 premade pie crusts

Directions
  1. ***For homemade pie crust
  2. Combine sifted flour and 1 teaspoon salt.
  3. Cut in shortening until particles are size of peas.
  4. Sprinkle with about 5 tablespoons cold milk, adding just enough to make stiff dough.
  5. Shape into 6 balls.
  6. Roll out on lightly floured board to 6-inch circles and fit into 6 (5-inch) tart pans.
  7. Fold edges under and build up high fluted rim.
  8. Continue to next section
  9. **If using ready made pie crust continue from here
  10. Shape into 6 balls
  11. Roll out pie crust on lightly floured board to 6-inch circles and fit into 6 (5-inch) tart pans.
  12. Pierce all over with fork tines.
  13. Separate 1 egg.
  14. Beat egg white lightly and brush over bottoms and sides of shells.
  15. Bake below center of oven at 425F 15 minutes.
  16. Meanwhile, melt butter and saute bacon 1 minute.
  17. Add apple slices, cover and cook about 10 minutes, until apples are almost translucent.
  18. Beat remaining whole eggs with remaining egg yolk.
  19. Add flour, half and half, remaining 1/2 teaspoon salt, nutmeg, caraway seeds and dry mustard and mix well.
  20. Sprinkle cheese evenly among tart shells, top with apples and bacon.
  21. Pour egg mixture into shells.
  22. Bake at 375F about 30 minutes, or until set in center.
  23. Cool to lukewarm before cutting
