This is a non-dairy version of roasted garlic and multi-variety potato soup. This has an autumnal flavor which is a bit sweet, but has some bite. A very clean and healthy dish.

Ingredients
  • 1 medium Onion, sliced
  • 4 medium Red Potatoes, large dice
  • 1 medium Turnip, large dice
  • 1 medium Yam/Sweet Potato, large dice
  • 2 stalks Celery, diced
  • 1 head Garlic, roasted and mashed
  • 2 tsp Olive Oil
  • 4 cups Water
  • 1 tsp Salt
  • 1/2 tsp Black Pepper, ground

Directions
  1. Cut top off head of Garlic, cover in foil and put in oven at 350 degrees for 1 hour.
  2. Pour Olive Oil in soup pot on a low flame. Add sliced Onion, keep flame low, do not brown. Sweat onions for 5 minutes.
  3. Add Red Potatoes, Sweet Potatoes, Turnip, Celery, Salt and Black Pepper.
  4. Add Water turn flame to high, bring to boil. Then cover pot and simmer for 1 hour.
  5. Remove Garlic form oven and let cool. Then squeeze garlic out into a bowl and mash with a fork before adding it to the soup.
  6. Mash veges with a potato masher (or immersion blender) in the soup pot. Simmer covered for 1 more hour.
  7. Add salt and pepper to taste and serve.

There are a lot of potato soup recipies on this site, but this one is a little different. It was partly inspired by a soup submitted by Mystic_River. I needed to make it non-dairy for my wife and I had a variety of potatoes and other things in the fridge. I finished eating it a few minutes ago! Tasty without the "take-your-head-off" garlic flavor.


I love non-dairy soups just because I don't want the extra calories. Thank you!

This sounds great....it's nice to make a meal that doesn't have dairy in it....I know my kids get enough of it during the day somehow


What about a organic brand of broth? like Imagine brand? what flavor would you use, if you had to pick?


I like Imagine brand and my mother is mad for the no-chicken broth, so I'll go with that.


I made this soup last night and it was excellent. So easy to make, and had just the right amount of garlic. I will be making this for my family often, they all loved it. Thanks for sharing it.


I use roasted garlic in mashed potatoes, in a sauce over roasted cauliflower(it has cream in it) I roast up about 8 heads of garlic at a time. In my house it doesnt last long. My husband and my son both spread it on bread and eat it. A quick appetizer we throw together is sliced tomatoes with fresh basil chopped and wet mozzarella sliced, Drizzle olive oil over them, and a nice loaf of italian bread, with of course the roasted garlic. Spread the garlic on a slice of bread and stack the rest on top. DELICIOUS !!!!

Left out the turnip. It's not an acquired taste yet.
Added a couple more potatoes to make up for it. Put some vegetable boulion in the water. I think a 2 hour simmer is a bit much.

It's official now. Mother came in extolling the soups virtues. You get a 5-forked soup spoon rating even without the turnip.
