My Crazy Potato Salad

- 2 lbs of yukon gold potatoes shopping list
- 1/2 large red onion shopping list
- 6 hard cooked eggs shopping list
- bacon bits or bacon cooked crisped and crumbled shopping list
- 2 level tsp dry mustard shopping list
- 2 level tsp thyme shopping list
- 1 lemon shopping list
- 1 c. sour cream shopping list
- mayo to your liking shopping list
- once around bowl with pinch of grey or kosher salt shopping list
- pinch of white pepper shopping list
- 1 or 2 finely chopped hot peppers of your choice (optional) shopping list
How to make it
- Wash and remove eyes from potatoes
- Place potatoes in salted boiling water
- I use spaghetti pot for easy lift-out
- Test frequently to get medium soft(not mushy)
- While they are cooking:
- lay flat grater over a large boil
- grate onion on large grate
- chop 2 egg whites ,place in bowl,
- place 2 cooked whole yolks in bowl with mustard, thyme, salt, pepper
- finely and carefully chop hot peppers of choice
- remove potatoes and allow to cool do not remove skin
- add mayo and sour cream to the large bowl
- mix ingredients gently but very well
- slice cooled potatoes in fourths
- slice again to desired thickness
- Place in serving bowl
- gently pour dressing mixture over potatoes and fold in
- slice the remaiining eggs in half and place randomly on top with crumbled bacon or bits
- parsley around edges of bowl
- papricka down center
- serve room temperature or chill
