Wow.. there was no place to put this one! It is a oil used in Mexican cooking.. I use it to saute' my shrimps and scallops. It adds a flavor that is not like any other.. and color... Kind of like a saffron color... I love it.. Many South American ... More

Ingredients
  • 1 cup light olive oil or canola oil
  • 1/2 cup Annatto Seeds

Directions
  1. Add the Annatto seeds to the oil in a medium pan..
  2. Bring the heat up slow and let it steep on a very low heat for about 10-15 minutes...
  3. Take off heat and let cool
  4. Strain into a jar.
  5. Lid and keep!
  6. That's it..
  7. Try it on peeled shrimps... or scallops.. soooooo good! I have used it to brown chicken, and then finish off by baking in oven.. No breading... Add some salt pepper and lime at the table...
