Oatmeal Soup Recipe

Ingredients

1 sliced onion

1 cup sliced mushrooms

2 cloves minced garlic

1 cup rolled oats

7 cups vegetable or chicken broth, beef doesn;t work too well here

1 16 oz can stewed tomatoes w/juice

1 8 oz can tomato sauce

salt and pepper to taste, here a jamaican jerk seasoning is also a nice changeup as well as jalapenos, yellow banana rings and juice, roasted red peppers, it's up to you.

1 cup low-fat milk

Directions

Saute onion, mushrooms and garlic in a bit of the broth, about 5 minutes or until the onions are translucent.

Stir in oats, broth, tomatoes and tomato sauce

Bring to a boil

Reduce heat and simmer 5 minutes or until oats have softened

Stir in the milk and season.

Hi. I am new here and found this site during my search for Oatmeal Soup. My mom made this soup for us when we were younger. A few of my siblings thought the soup was gross but I liked it with a few exceptions. Recently, my brother ask if I could still make it and of course I made it and sent him the ingredients and instructions. I never thought this soup was so worldly. I have found Scotish, equadorian, Mexican, Irish recipe variations just to name a few.
