How to make it

  • Heat oven to 350ºF. Cook and drain noodles as directed on package.
  • Cook beef and onion in 10-inch skillet over medium-high heat about 6 minutes, stirring occasionally, until beef is brown; drain. Stir in pasta sauce and mushrooms. Heat to boiling, stirring constantly. Pour into ungreased rectangular baking dish, 11x7x1 1/2 inches.
  • Mix ricotta cheese, spinach, mozzarella cheese, 1/4 cup Parmesan cheese, the salt, pepper and garlic. Spread 3 tablespoons of the cheese mixture over each noodle. Roll up each noodle; cut roll crosswise in half. Place cut sides down in beef mixture.
  • Cover and bake about 30 minutes or until hot. Serve with additional Parmesan cheese.

    I have my own version of this, and it's almost exactly like yours! The biggest difference is that instead of using just mozzarella cheese, I use an italian 3 or 4 cheese mix (mozzarella, provalone, asiago, parmesan) that you can buy prepackaged at the store. It gives it a fancier flavor. :) And it sort of gives a lighter taste than mozzarella.

    It was a very nice change for us to eat this last night. It came out a little bit cheesy for us, so next time we might leave out the mozarella from the rolls.

    I make this also, but I like cottage cheese better and I also stick the meat in the noodle, and pour the sauce over.

    Thank you again for sharing. I made this tonight for dinner. The kids loved it. My oldest daughter liked the fact the meat mixture was on the bottom instead of inside the noodles. I will make this again.~M
