How to make it

  • Rinse Pork Chops. Mix Flour, salt, pepper and sage in a pie pan, Mix Eggs and Milk in another pie pan. Start heating Vegetable Oil on medium heat in an iron skillet - you don't have to use an iron skillet, but EVERYTHING tastes better cooked in an iron skillet. Coat Pork Chops in flour mixture, then in egg mixture, then back in flour mixture and place them in the skillet. If you cook on medium heat, the Chops will cook all the way through without burning.

    I've recently discovered that if you add about 1/2 cup of cornmeal (all purpose or self rising) to the flour and spice mixture, the batter sticks better and the chops brown up much better. They're awesome this way!! Of course, everyone has they're own taste, so it will depend on how you like them.

    I tried this recipe yesterday. The only thing I did different was I fried 3 chops in about an inch or so of 'old' grease. They came out better than any other time I fried chops. Will be using this recipe more often. Now I wonder if any other seasoning blend will work as long as I use the egg/milk mixture. Thanx a bunch.

    yummo! I'm going to use your recipe on pork short ribs as I've had this dish in a Chinese restaurant and they served the battered ribs with a bbq dipping sauce. Thanks for your recipe!
