Ingredients
  • 1 lb kale, mustard greens or chard, (about 8 cups)
  • 1 Tbs extra virgin olive oil
  • 5 cloves garlic, minced
  • 1/2 tsp salt
  • Lemon wedges

Directions
  1. Directions
  2. Wash greens thoroughly by soaking in lots of cold water.
  3. Drain.
  4. Chop greens into about 3-inch pieces.
  5. Heat oil in a large skillet.
  6. Sauté garlic for 2 minutes.
  7. Add greens to skillet.
  8. (They do not have to be dried off, as the water will evaporate during cooking.)
  9. Cover and cook over medium heat for 10 minutes, stirring once in a while to coat all the greens with garlic and oil.
  10. Sprinkle with salt.
  11. Serve with lemon wedges.

Alterations


I like to dice up pancetta and add it to the skillet with the garlic. I render the fat to make the cubes crispy before tossing in the chopped greens.
