Girls Scouts Thin Mint Cookies

- 3 (12oz bags of semi sweet chocolate chips) shopping list
- 3/4 teaspoon peppermint extract shopping list
- 6 tablespoons of shortening shopping list
- Ritz crackers shopping list
How to make it
- Combine chocolate chips, peppermint extract and 6 tablespoons of shortening in a large microwaveable bowl.
- Heat on 50% power for 2 minutes, stir gently and then heat another minute. Stir again and if chocolate is still not melted and smooth keep zapping in the microwave at 30 second intervals.
- Dip Ritz crackers in chocolate mixture with a fork remove and let some of the chocolate drip off before placing on a wax paper lined cookie sheet. Refrigerate to firm up.
- *** You can also use Vanilla Wafers but you won't have the little ruffly edges as you do with the Ritz Crackers.

Yay! I crave thin mints all year, and of course can only get them during the cookie sale - THANK YOU SO MUCH for this! I'd make these even if it were a hard & complicated recipe ... but it's easy too! Wish I could give you a 10!
