These are quick and pretty good, you can also use more peppermint extract to your liking if you wish. Enjoy!

  • 3 (12oz bags of semi sweet chocolate chips)
  • 3/4 teaspoon peppermint extract
  • 6 tablespoons of shortening
  • Ritz Crackers

Directions
  1. Combine chocolate chips, peppermint extract and 6 tablespoons of shortening in a large microwaveable bowl.
  2. Heat on 50% power for 2 minutes, stir gently and then heat another minute. Stir again and if chocolate is still not melted and smooth keep zapping in the microwave at 30 second intervals.
  3. Dip Ritz crackers in chocolate mixture with a fork remove and let some of the chocolate drip off before placing on a wax paper lined cookie sheet. Refrigerate to firm up.
  4. *** You can also use Vanilla Wafers but you won't have the little ruffly edges as you do with the Ritz Crackers.

Alterations


I made these using a package of chocolate almond bark and stirred in 1 1/2 tsp peppermint after melting. A little easier and cheaper than the real chocolate & adding shortening.
