How to make it

  • Combine chocolate chips, peppermint extract and 6 tablespoons of shortening in a large microwaveable bowl.
  • Heat on 50% power for 2 minutes, stir gently and then heat another minute. Stir again and if chocolate is still not melted and smooth keep zapping in the microwave at 30 second intervals.
  • Dip Ritz crackers in chocolate mixture with a fork remove and let some of the chocolate drip off before placing on a wax paper lined cookie sheet. Refrigerate to firm up.
  • *** You can also use Vanilla Wafers but you won't have the little ruffly edges as you do with the Ritz Crackers.

    I made myself sick off of these tonight! I couldn't stop eating them, even the ones that weren't cooled yet. :) I'll probably be making these again during the holidays. Thanks for sharing this neat recipe!
