Potatoe pancakes is the easiest way to describe boxty. Very popular at barbeques and simple to make. Great if you have left over mashed potatoes

Ingredients
- 2 Raw Potatoes
- 4 Mashed Potatoes
- 1/2 c. Plain Flour
- 1 c. Chopped green onions --or-- 1 minced onion
- 1 Egg
- 2 tsp. Garlic Powder (optional)
- Salt + Pepper to taste
Directions
- Grate the raw potatoes and miz well with the mashed potatoes.
- Add the salt, pepper, garlic and flour.
- Slightly beat the egg and add it to the mixture.
- Add green onions (or regular onion).
- Add as much milk as you need to make the mixture the same tickness as pancake batter.
- The size you want to make the patties is up to you. I make mine slightly smaller than a pancake.
- Cook over moderate heat for 3-4 minutes on each side or until they are lightly browned
- *****To make it more 'breakfast friendly' add pieces of cooked bacon to the batter*****

This sounds great,kind of reminds me of my late Irish Mother in laws Colcannon recipe. I served them at Easter and actually had to make another batch the next day for my oldest son to take home. Big 5 for you.
