A take on the Rachel Ray show's version to be GF/cow dairy free. These are f-a-n-t-a-s-t-i-c! Great served with some sweet potato fries on the side.

Ingredients
  • 2 tablespoons extra-virgin olive oil, plus some for drizzling
  • 2 garlic cloves, chopped
  • 1/2 red onion or sweet onion, chopped
  • 1 (10 ounce) box frozen spinach, defrosted (or fresh spinach)
  • 1 tablespoon fresh oregano (dried will work)
  • 1/2 cup goat feta, crumbles or dry curd cottage cheese (DCCC)
  • 1 lb ground chicken or ground turkey
  • salt to taste
  • pepper to taste
  • paprika to taste

Directions
  1. Heat a large skillet over medium heat with a tablespoon of olive oil.
  2. Add the chopped garlic and chopped red onion and cook for 5 minutes. Transfer the onions and garlic to a bowl to cool.
  3. Return pan to heat.
  4. Squeeze all the water out of the thawed spinach.
  5. Separate the spinach as you add it to the bowl with cooled onions and garlic, then season with oregano.
  6. Add in feta crumbles then chicken or turkey and a drizzle of olive oil.
  7. Mix and form into 4 patties, 1-inch thick.
  8. Raise heat on pan to medium-high with another tablespoon of olive oil.
  9. Add patties and cook 6 minutes on each side.
  10. Season with salt, pepper and paprika to taste.

Wow! This is exactly what I was looking for! Just searched "turkey burger," hoping for a burger with some herbs and spices and feta cheese and this came up on top. Printing it out right now! Oh...and I actually have some fresh oregano in the fridge! I'm happy that I'll be able to use it up.

April 2, 2008: Hey wendio, I finally got the chance to try these and I gotta say they were wonderful!!! I tried one batch with the feta on top of the grilled burger (like my ex-boss at the Greek diner used to make his cheese burgers!)but they didn't taste as good as the ones with the feta on the inside. Also, I threw in some chopped kalamata olives just for fun (Mmmm...gotta love that salt!) and they really tasted great! Thanks again for this great recipe. If I could give it a Perfect 10, I would.

So I haven't tried this yet- but plan to, but I have a question. What is Dry Curd Cottage Cheese?


It's also made by Friendship Farmers and also referred to as Hoop cheese. It's something people on the Specific Carb Diet use for cooking quite often. It's low lactose and easy to digest. If you're able to, you could use feta instead. It's YUMMY with that! Take care.

I've been looking for a good turkey/spinach/goat cheese burger recipe and I think I've found it. Your picture really got me and I had to try this. We had them for dinner tonight and they were WONDERFUL. I was wanting to put some fresh tomato on top but didn't have any and didn't want to ruin the taste by putting any ketchup or mustard on, so to give it a little extra flavor, we ended up spreading a little more goat cheese on the bun, just like it was mayo. We both loved it! Thanks for sharing a great recipe!


A follow-up: my husband, who NEVER eats more than one burger, ended up having a total of 3 before the night was over! I also forgot to add in my other "review" that I used fresh spinach, instead of frozen, and we cooked them on the grill. Just put down foil and sprayed it with a little olive oil spray. Perfection. Wish I could rate it a 10!
