A classic Alfredo with a light lemony tang, piquant cheese and a good grind of pepper, not for the calorie-wise!

  • 1 1/2 cups heavy cream
  • 1 cup evaporated skim milk
  • 1/2 cup fresh lemon juice
  • 10 tablespoons unsalted butter
  • 2 cups fresh-grated Parmesan
  • 2 teaspoons grated lemon zest
  • Salt and pepper

Directions
  1. Stir 1 cup of the cream, evaporated milk and the lemon juice in a heavy large skillet
  2. to blend.
  3. Add the butter and cook over medium heat just until the butter melts, stirring
  4. occasionally, about 3 minutes. Remove from the heat.
  5. **If adding pasta or vegetables to sauce, add at this point and toss**
  6. Add the remaining 1/2 cup of cream and Parmesan to the cream sauce in the skillet.
  7. Add the lemon zest, salt, and pepper.
  8. Stir and cook over low heat until sauce thickens slightly.

I've been looking for a good alfredo recipe, and this sounds perfect, thank you! How do you determine serving values with homemade stuffs?


I usually just calculate based on how many servings of alfredo pasta we got out of this, for a typical meal. This past Christmas Eve we made this batch (same size) but since there were 10 other dishes it fed 20. Any leftovers will keep in the fridge for about 3-4 days.


This was looking a little thinner than I was expecting. What do I know! I've never made an alfredo sauce before! So I added an 8oz. block of cream cheese.
