Low Country Succulent Shrimp And Cheese Grits

- 3 cups water shopping list
- 1/2 teaspoon salt shopping list
- 1 cup quick-cooking grits shopping list
- 1 (7 ounce) package garlic cheese spread shopping list
- Note: If you cannot find garlic cheese spread, I have used a tub of spreadable cream cheese and added 2 garlic cloves, minced. shopping list
- cayenne pepper or Tobasco sauce to taste shopping list
- 1 small onion, finely chopped (about 1/4 cup) shopping list
- 1/4 cup bell pepper, finely chopped shopping list
- 2 Tablespoons butter shopping list
- 2 teaspoons olive oil shopping list
- Note: The true "Low Country" style is to use 3 Tablespoons bacon grease/drippings but this is a "healthy version" shopping list
- 1-1/2 pounds fresh shrimp, shelled and deveined without tails shopping list
- 1 large tomato, diced shopping list
- salt and pepper to taste shopping list
- fresh parsley or spring/green onions shopping list
How to make it
- In a saucepan, bring the water and salt to a boil.
- Stir in the quick grits and reduce the heat.
- Cook slowly for 5 minutes.
- Remove from heat and stir in the garlic cheese until melted.
- Let sit for 2 to 4 minutes; keep warm.
- In a skillet, heat the butter and oil over medium heat.
- Saute onion and bell pepper until soft
- Add and saute the shrimp until pink (no longer than 3 minutes or the shrimp will be tough)
- Stir in diced tomato and cook until tomato is heated through. Remove from heat and salt and pepper to taste.
- Spread the cheese grits on a warm platter.
- Top with shrimp mixture.
- Garnish with either chopped fresh parsley or spring onions sliced.

Shrimp and grits followed by the Key Lime Pie...Gotta have sweet iced tea, too! Man, is life good or what? Yeah.....it's good for sure.
