This is one of the finest dishes I've tasted from my "Southern" days. Unfortunately, grits are not readily available in some states and are most certainly difficult to find in Canada. Honestly though, one taste of grits or recipe including grits al... More

Ingredients
  • 3 cups water
  • 1/2 teaspoon salt
  • 1 cup quick-cooking grits
  • 1 (7 ounce) package garlic cheese spread
  • Note: If you cannot find garlic cheese spread, I have used a tub of spreadable cream cheese and added 2 garlic cloves, minced.
  • Cayenne pepper or Tobasco sauce to taste
  • 1 small onion, finely chopped (about 1/4 cup)
  • 1/4 cup bell pepper, finely chopped
  • 2 Tablespoons butter
  • 2 teaspoons olive oil
  • Note: The true "Low Country" style is to use 3 Tablespoons bacon grease/drippings but this is a "healthy version"
  • 1-1/2 pounds fresh shrimp, shelled and deveined without tails
  • 1 large tomato, diced
  • salt and pepper to taste
  • fresh parsley or spring/green onions

Directions
  1. In a saucepan, bring the water and salt to a boil.
  2. Stir in the quick grits and reduce the heat.
  3. Cook slowly for 5 minutes.
  4. Remove from heat and stir in the garlic cheese until melted.
  5. Let sit for 2 to 4 minutes; keep warm.
  6. In a skillet, heat the butter and oil over medium heat.
  7. Saute onion and bell pepper until soft
  8. Add and saute the shrimp until pink (no longer than 3 minutes or the shrimp will be tough)
  9. Stir in diced tomato and cook until tomato is heated through. Remove from heat and salt and pepper to taste.
  10. Spread the cheese grits on a warm platter.
  11. Top with shrimp mixture.
  12. Garnish with either chopped fresh parsley or spring onions sliced.

Wow, does this ever sound delightful! You're right, grits are hard to find here north of the border but I'm sure it would be equally good with rice? Thanks!

Shrimp and grits followed by the Key Lime Pie...Gotta have sweet iced tea, too! Man, is life good or what? Yeah.....it's good for sure.

Grit with shrimps, southern man's caviar. I'll have to try saltymike's suggestion with the Key lime pie. Don't you miss the days when bacon grease was considered a healthy part of southern cooking. Thanks for the post.

Just moved to NC 9 months ago, tried them in some Restaurant, not to impress.
I am going to try this one. Thanks for the recipe.
I eat grits with lots of butter and sugar, once was scolded by an old man ( 90 maybe ?) in a restaurant in Louisiana for ruining the grit..
