Rice And Mushroom Casserole Recipe

Ingredients

2 cups raw rice, not Instant Rice

3 very large onions, chopped

butter for sauteeing

1 large can mushroom pieces, drained

1 can Cream of Mushroom Soup

Salt and Pepper to taste

Directions

Cook the rice per the package's instructions

Saute' the chopped onions in a few Tbsp. of butter until just golden.

When golden add the mushrooms to the onions and simmer.

Add the cooked rice, soup, salt and pepper to the onion mixture.

Turn this into a greased 2 quart casserole and bake, uncovered, for about 45 minutes.

we never ate this kind of thing in my house growing up but i am fascinated by casseroles now as an adult!!..
i guess you could add some cooked chicken and just make a meal of it?...
