Greek Cornbread Recipe
A unique way to make cornbread, but equally as good with soup and chili or just hot with butter.

Ingredients
  • 2 1/2 cups cornmeal
  • 1 1/2 tsp. baking powder
  • 3 tbsp. granulated sugar
  • 4 cups zucchini, grated
  • 3 eggs
  • 1 cup cottage cheese
  • 1 1/2 cups feta cheese, crumbled
  • 1 cup milk
  • 1/2 cup butter, cut into pieces

Directions
  1. Preheat oven to 375ºF. Grease and flour a 9"x13"x2" baking pan.
  2. Mix cornmeal, baking powder and sugar.
  3. In another bowl, combine zucchini, eggs, cottage cheese, feta cheese and milk. Add cornmeal mixture to we ingredients and blend well.
  4. Pour into pan, dot the top with butter.
  5. Bake until browned on top. (about 1 hour)

Now this is different. I'll have to give it a try. I like feta and love zucchini, I'm sure this will be very satisfying. Nice post.
