Bacon and Egg Salad for sandwiches

A different egg salad for sandwiches.
Ingredients
- 6 hard-cooked eggs, peeled and chopped shopping list
- 3 Tbs finely minced red onion* shopping list
- 1/3 cup mayonnaise shopping list
- 1 tsp prepared mustard shopping list
- 1/4 tsp salt shopping list
- 1/8 tsp pepper shopping list
- 1/3 cup bacon, cooked and crumbled shopping list
- *Original recipe calls for 1/3 cup diced celery. I never keep celery around and I prefer onion so I made this change. shopping list
How to make it
- In a bowl, combine the eggs, onion, mayonnaise, mustard, salt and pepper. Fold in bacon. Refrigerate any leftovers.
