Ingredients
  • 1 cup margarine, softened
  • 1 package (8 ounces) cream cheese, softened
  • 1-1/2 cups sugar
  • 1-1/2 teaspoons vanilla extract
  • 4 eggs
  • 2 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh whole cranberries

Directions
  1. In a large mixing bowl, cream the butter, cream cheese, sugar and vanilla.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine the flour, baking powder and salt; stir into creamed mixture just until moistened.
  4. Fold in cranberries and pecans.
  5. Fill greased or paper-lined muffin cups three-fourths full.
  6. Bake at 350° for 30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
  7. Serve warm. Yield: 2 dozen.
