  • Orange Curd
  • 3 large eggs
  • 2 large egg yolks
  • 1/2 cup sugar
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons finely grated orange zest
  • 2 teaspoons finely grated lemon zest
  • 1 stick (4 ounces) cold unsalted butter, cut into tablespoons

Directions
  1. In a small heavy saucepan, whisk together the eggs and egg yolks. Whisk in the
  2. sugar, then whisk in the citrus juices and zests. Add the butter and whisk
  3. constantly over moderately low heat until the mixture thickens, about 8 minutes;
  4. do not let it boil. Immediately strain the curd into a bowl. Press plastic wrap
  5. directly on the surface of the curd and cut 6 small steam vents in the plastic.
  6. Refrigerate the curd overnight; it can be refrigerated for up to 1 week.
  7. Makes about 1 2/3 cups

This recipe is different from mine. I like the addition of the lemon in your recipe.


Did a test on this today... It is awesome.. I could eat it with a spoon! It is going in my cake! I'm putting it in the chocolate.. but I could see it in a white or yellow cake with whipped cream frosting... and mandarin oranges on top! Oh yeah! A summer treat!

I recently had a wonderful restaurant breakfast of french toast topped with orange sauce and almonds. I'm hoping this recipe will allow me to recreate it. Thank you for sharing! (The restaurant was Hattie's in Castle Rock, WA)
