Blueberry Drop Cookies Recipe
this recipe comes from the prize winning blueberry recipe pamphlet.. this had been on my list to make but I never got to it.. hope you will like it.

Ingredients
  • 2 cups flour
  • 2 teasps. baking powder
  • 1/4 teasp. salt
  • 3/4 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 teasp. grated lemon rind
  • 1/2 cup milk
  • 1 cup fresh or dry packed frozen blueberries

Directions
  1. sift together flour, baking powder, and salt.
  2. cream shortening until soft and gradually beat in sugar.
  3. add eggs and lemon rind and beat until well mixed.
  4. add flour mixture alternately with the milk, beating well after each addition.
  5. lightly fold in the blueberries.
  6. drop by teaspoons onto a greased cookie sheet
  7. bake at 375'F for 10-12 minutes.
  8. yields 2 1/2 dozen cookies

Every Spring we pick Blueberries. Last season we gathered 10 Gal. We have a deep freezer full of them. Always looking for another way to use them up. This looks great!
