Roasted Red Potatoes with Bacon and Cheese

GREAT potatoe side dish. Heck, I'd give it a 5 myself if I could. My husband absolutely loves this side.
Ingredients
- 1/2 cup ranch dressing shopping list
- 1/2 cup finely shredded italian five cheese blend shopping list
- 1/4 cup cooked bacon bit (the real deal) shopping list
- 2 Lb. small red bliss potatoes, quartered shopping list
- 1 Tbs. fresh chopped parsley or 2 Tbs. dried shopping list
How to make it
- Preheat oven to 350*
- Mix dressing, parsley, cheese and bacon bits in large bowl
- Add potatoes, toss to coat all
- Spoon into lightly greased 13X9 baking dish. Cover with foil
- Bake 40 minutes then remove foil. Bake and additional 15 minutes or until potatoes are tender
- Now...this part is up to you, it is really good to eat at this point, it's a bit more creamy and casserolish, but, I like to broil them on the top before serving to give them some crunch and a bit browning

I love roasted potatoes, got to have some garlic with mine, but love them in cheese and oh bacon, gotta love the bacon:o)
