Ingredients
  • ½ cup chopped fresh cilantro
  • ¼ cup vegetable oil
  • ¼ cup finely sliced green onions
  • 3 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1 teaspoon hot bean paste
  • ½ teaspoon salt
  • 6 whole chicken legs (drumsticks with thigh attached)
  • Vegetable oil for brushing chicken

Directions
  1. Combine all marinade ingredients. Place chicken legs in a resealable plastic bag set in a shallow dish. Pour marinade mixture over chicken legs; close bag. Marinate in refrigerator 2 to 4 hours, turning occasionally to distribute marinade.
  2. Lightly brush chicken legs with oil. Place chicken in center of cooking grate. Grill over indirect heat for 30 minutes or until juices run clear, turning once halfway through grilling time.
  3. Make sure that there is no flame directly under the chicken while it is cooking as the drippings will flame up and ruin your efforts.

Just made this tonight with split chicken breasts. The whole family devoured it! Normally I don't eat the skin on chicken but this tasted so fabulous after grilling that I couldn't resist! This recipe is a keeper! BTW - I used red chili sauce in place of the hot red bean paste and it tasted wonderful. I haven't tried it with the paste so I can't compare how they differ, but my substitution didn't hurt the recipe IMHO.


I just ate dinner and my mouth is already salivating again! I don't have access to any open flames (living in the city) but I imagine it could be adapted to the oven/broiler, or a grill pan? Mmm...can't wait to experiment!

Do you think I could substitute Hot Chili Sauce for Hot Bean Paste? I don't have the Hot Bean Paste and don't know where to get it... I've only seen the sweet bean paste.
