Ingredients

How to make it

  • Preheat oven to 350 degrees.
  • In skillet cook ground beef with onion until meat loses its pink color.
  • Drain off excess fat if necessary.
  • Add bell pepper, tomatoes, corn, chili sauce and 3/4 teaspoon salt.
  • Bring to boiling; reduce heat and simmer uncovered 15 minutes.
  • Mush:
  • Stir cornmeal and 1 teaspoon salt into 1 cup cold water.
  • Gradually pour into 3 cups boiling water, stirring constantly.
  • Cook until think and bubbly, stirring frequently.
  • Spread about 2/3 of the mush in the bottom of an ungreased 2 quart casserole dish.
  • Pour beef filling over this.
  • Spoon remaining mush around the edges of casserole.
  • Bake for 20 minutes.
  • Grated cheese can be added to top if desired about 5 minutes before done...

    I made something very similar to this with leftover turkey last night. It was good but I didn't love it as much as I thought I would. I preferred a turkey pot pie we made the prior night. Only way you find out is checking out new recipes so it is still worth the effort. Hope your New Year will be a very happy one.

    I think I might try this and instead of the mush mixture just whip of a quick batch of Jiffy cornbread mix. Do you think that would work just as well? - Happy New Year to you and all those you love. - Susana
