How to make it

  • In a small bowl, combine the dry rub ingredients and mix well.
  • Wash and cut the meat into cubes and put in a large bowl.
  • Sprinkle the rub over the meat; mix well and let rest.
  • Slice the onion and peppers; add to bowl.
  • Add salt and pepper and combine all well.
  • Heat olive oil in a large skillet or wok using high heat.
  • Stir fry until the chicken is no longer pink and vegetables are crunchy tender.
  • Note: A small t = teaspoon and a capital T = Tablespoon.

    Just had this for dinner, it was lovely.
    I made it with diced chicken breast and stired the rub through, I also disguised veg in it by grating several differnt vegies LOL.
    To make it Fructose Friendly I had to cook the whole garlic clove in oil and remove then use the oil in the rub. and I had to use the greens of spring onions instead of red onions.

    Great recipe. I made this last night to go with Moroccan stew - it was delicous! I had to substitute a little as I didn't have cumin on hand and I don't like green peppers but still I stayed true to the recipe - delicous. I would say only to clarify weather you mean teaspoon or tablespoon on the recipe. My husband helped me make this and thought it was tablespoon and we made a lot of the rub - didn't use it all of course. Just a thought. Tastey dish!

    Yum - was fun to make and the chicken tasted oh so sweet goes perfect with the Spiced Cous Cous recipe found elsewhere on this site. I have added a photograph of the dish I took after I made it tonight - hope I did your recipe justice. :)
