Ingredients
  • 2 lb boneless, skinless chicken breasts, cut in 1 1/2-inch cubes
  • 2 small red onions, peeled and sliced
  • 2 bell peppers cleaned and sliced
  • 1/4 c olive oil
  • salt to taste
  • pepper to taste
  • Dry Rub
  • 1 t cinnamon
  • 1/2 t salt
  • 1/2 t cumin
  • 1/2 t turmeric
  • 1/4 t cayenne
  • 1/4 t pepper
  • 1/4 t cardamon
  • 1/8 t nutmeg
  • 1/8 t chili powder
  • 2 t brown sugar

Directions
  1. In a small bowl, combine the dry rub ingredients and mix well.
  2. Wash and cut the meat into cubes and put in a large bowl.
  3. Sprinkle the rub over the meat; mix well and let rest.
  4. Slice the onion and peppers; add to bowl.
  5. Add salt and pepper and combine all well.
  6. Heat olive oil in a large skillet or wok using high heat.
  7. Stir fry until the chicken is no longer pink and vegetables are crunchy tender.
  8. Note: A small t = teaspoon and a capital T = Tablespoon.

Yum - was fun to make and the chicken tasted oh so sweet goes perfect with the Spiced Cous Cous recipe found elsewhere on this site. I have added a photograph of the dish I took after I made it tonight - hope I did your recipe justice. :)


I'm going to finally try this recipe this week. My question is can I just use prepackaged garam masala and add the chili powder and brown sugar to it?


Because I wasn't sure about the spice ratios compared to garam masala I stayed true to the recipe. It was really delicious. It is now a family favorite.

Great recipe. I made this last night to go with Moroccan stew - it was delicous! I had to substitute a little as I didn't have cumin on hand and I don't like green peppers but still I stayed true to the recipe - delicous. I would say only to clarify weather you mean teaspoon or tablespoon on the recipe. My husband helped me make this and thought it was tablespoon and we made a lot of the rub - didn't use it all of course. Just a thought. Tastey dish!
