Pecan Crusted Turkey Cutlets Recipe
I consider this a light meal....its easy to fix and has lots of flavor... Another Southern Living Recipe

Ingredients
  • 3/4 cup soft bread crumbs, toasted
  • 1/2 cup finely chopped pecans
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg white, lightly beaten
  • 1 tablespoon water
  • 4 turkey breast cutlets (4 oz each)
  • butter flavored cooking spray

Directions
  1. Combine first 5 ingredients in a shallow dish; set aside.
  2. Combine egg white and water.
  3. Dip turkey cutlets in egg mixture; then coat with breadcrumb mixture.
  4. Place on a baking sheet coated with cooking spray.
  5. Coat cutlets with cooking spray
  6. Bake at 350 degrees for 12 minutes or until juices run clear when cut with a knife.

The flavours sound great but I'd nix that "butter flavoured cooking spray".
Also, is the egg separated? The ingredients calls for whole egg and the method for egg white?
