Good God Greek Pumpkin Pie Visikiotiki Kolokithopita

- 1 lb phyllo (after unrolling, keep between 2 damp towels to prevent drying and cracking during use) shopping list
- 1 lb butter shopping list
- 1 medium-sized pumpkin shopping list
- 1 tbs salt shopping list
- 1/2 cup olive oil shopping list
- 1/2 cup sugar shopping list
- 1 tsp cinnamon shopping list
- 1/4 tsp ground cloves shopping list
- 3 cups chopped walnuts shopping list
- 1 cup white raisins shopping list
How to make it
- Cut and pare pumpkin, removing seeds.
- Cut into 1-inch cubes and grind cubes in food processor until no longer chunky.
- Place ground pumpkin into cheesecloth and sprinkle with salt.
- Let stand overnight to remove moisture.
- Take 8 cups strained pumpkin and place in a pot, adding the olive oil and butter.
- Simmer for one hour, stiriing to prevent scorching.
- In last 5 minutes, add sugar and raisins.
- Remove from heat and add one cup walnuts.
- Set mixture aside to cool.
- Brush bottom of 14x20 pan with melted butter and line with pastry sheet,brush with melted butter and sprinkle with walnuts.
- Repeat this process until 1/2 lb of the pastry sheets are used.
- Pour pumpkin mixtureinto center and spread evenly.
- Cover with remaining phyllo sheets making sure to brush each sheet with melted butter and sprinkling with chopped walnuts.
- Top with 6 individually buttered sheets (no nuts).
- Trim and cut into 2" diamond shapes.
- Pour remaining butter evenly over the pie
- Bake at 375 for one hour.
- SYRUP:
- 3 cups sugar
- 2 cups water
- 1/2 cup honey
- While pastry is baking, boil sugar and water until a clear, thin syrup is formed.
- Stir in honey and remove from heat.
- Cool.
- Pour over hot pastry out of oven.
