Ingredients
  • 1 1/2 lb Red New Potatoes
  • 1/4 lb Crab Meat (cooked)
  • 2 Tb Chives -- minced
  • 1 Tb Parsley -- chopped
  • 1 tsp Olive Oil
  • 2 Tb Nonfat Mayonnaise
  • 2 Tb Nonfat Yogurt
  • 2 tsp Lemon Juice
  • 3 Tb Parmesan Cheese
  • Optional: Mixins' finely chopped carrots, broccoli etc.

Directions
  1. Bake potatoes in a 350 degree oven until tender (30-45 min).
  2. Let cool.
  3. Cut into quarters. In a bowl, combine all other ingredients.
  4. Stir in potatoes.
  5. Place into a shallow baking dish.
  6. Broil 4" from heat until golden.
  7. Serve hot.

Oooh, I like this. Noir, help. Made twice baked potatoes last night and they came out nasty-gummy and heavy-and didn't taste that good either. First time I've made these that they came out so bad. Message, unless you think someone else might be interested.
