Ingredients
  • 1/2 cup butter softened
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla flavoring
  • 1 3/4 cups of all purposr flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup of milk
  • 1/4 confectioners sugar for dusting

Directions
  1. Preheat over to 350 degrees F
  2. Grease and flour 9 inch round pan
  3. In a medium bowl cream together butter, sugar until light and fluffy
  4. Beat in the eggs next one at a time
  5. Stir in vanilla
  6. next combine flour, baking powder, and salt, stir into batter
  7. alternating with the milk
  8. If the batter is stiff add just a little more milk.
  9. Spread batter evenly into pan
  10. Bake for 30 to 35 minutes
  11. cool in pan on wire rack then turn out onto serving plate
  12. dust with powdered sugar lightly

This turned out to be a wonderful and light cake to eat with my tea. I will definitely make it again.


Do you think I could replace the milk with light soy milk? I want to make this right now but ran out of milk and don't want to run to the store. Feeling lazy but inspired enough to bake this cake which I REALLY REALLY want to eat!


I could make this in the morning for afternoon tea. Love how elegant it looks!

Alterations


I didn't have any confectioners sugar, so I sprinkled a cinammon/sugar mix on the top for the last 20 minutes of baking. This took 40 minutes in my oven, which usually runs spot on. Worth the wait though!


Thanks so much for your comments on the Irish Tea Cake.... If you love a simple little cake.. this works wonders... I really love it.... Its so good with fresh fruits and creams.
