Aunt Barbs Lemon Blueberry Tea Bread Recipe
This is a bread my favorite Aunt always served when we visited. Very similar to others I've had, the others never had "just the right" taste!

Ingredients
  • ½ C butter
  • 1 1/3 C sugar (reserve 1/3 C)
  • 2 C flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • ½ C milk
  • 1 ½ C fresh blueberries ( frozen may be used)
  • ¼ tsp lemon juice

Directions
  1. Cream butter and 1 cup of sugar
  2. Add eggs and beat well
  3. Add dry ingredients alternating with the milk
  4. Fold in Blueberries
  5. Put in prepared loaf pan
  6. Bake at 350 for approximately 65 minutes
  7. Cool 10 minutes, remove from pan, poke holes all over with a skewer
  8. Combine reserved 1/3 C sugar and lemon juice and brush over cake until completely used
  9. 12 servings

Looks good...I'm going to try a whole-wheat version w/ less sugar, and use brown sugar...I'll let you know! Thanks dear!
