Chicken Bonne Femme

- 4 slices of bacon cut into 1 inch squares shopping list
- Two lb young fryer cut up in small pieces shopping list
- salt and freshly ground Black pepper shopping list
- 2 Tbsp flour shopping list
- 1/2cup ham cuti nto tiny pieces shopping list
- 1 cup chopped gre een onion tops shopping list
- 2cup sliced mushrooms(fresh) shopping list
- 1cup drywine ( Do not use cooking wine shopping list
- 1 Tablespoon worcestershiresauce shopping list
- 1/4tsp tabassco shopping list
- Vegatable oil for frying shopping list
- 2lbs white potatoes ,peeeled and cut into 1/4 inch pieces shopping list
- 1 stick butter shopping list
- 8 Gloves garlic,chopped shopping list
How to make it
- Preheat oven to 400 degrees
- Fry the bacon in a large skillet until crisp
- Remove with a slotted spoon and set aside leaving the fat in the skillet
- Season the chicken with salt and pepper
- Dust lightly with the flour ( I use a ziplock bag)
- Cook the chicken in the rendered bacon fat over high heat but be careful not to scorch Yikes!
- Brown on all sides
- Remove chicken pieces to an oven proof platter and keep warm
- Add the ham and yellow onions tothe skillet that you browned the chicken in
- Saute until the onions turn transparaent.
- Add the mushrooms.Worcestire sauce and tabassco, and bring it to a boil
- After a minute,reduce the heat to maintain a simmer
- Pour the oil into a deep skillet the depthof 1 iinch
- Fry the potatoes till lightl;y browned
- Drain them well and add to the skillet with the ham and onions.
- This is the Bomnne Femme " Garnish"
- Continue simmering the garnish until all of the liquid absorbed ,lightly stir to distribute the ingredients.
- Remove from fire
- Heat the butter in a small sauce pan until it starts to bubbling
- Lower the heat skim the foam off and add the garlic.
- Cook the garlic in the hot butter for almost a minute then add to the Bonne Femme Garish
- Spoon the Bonne Femme overand between the chicken pieces
- Season to taste with salt and pepper.
- Crumble the bacon over the top
- Bake for 10 to 12 minutes.
- Turn the chicken pieces ,redistribute the "garnish"
- If the white meat is done the first remove from the platter.
- Continue cooking the thighs and the rest of the dark meat till done
- Remove and pour any remaining "garnish" over the chicken and Relax Its done and its a feast fit for a King!!!!!
