Chicken Bonne  Femme Recipe
Bonne Femme is french for good wwoman but herei it applies to the dish Good woman;s chicken and Brabant potatoes. An exceptional dish and one of my very favorite tio impress company

Ingredients
  • 4 slices of bacon cut into 1 inch squares
  • Two lb young fryer cut up in small pieces
  • Salt and freshly ground Black pepper
  • 2 Tbsp flour
  • 1/2cup ham cuti nto tiny pieces
  • 1 cup chopped gre een onion tops
  • 2cup sliced mushrooms(fresh)
  • 1cup drywine ( Do not use cooking wine
  • 1 Tablespoon worcestershiresauce
  • 1/4tsp tabassco
  • Vegatable oil for frying
  • 2lbs white potatoes ,peeeled and cut into 1/4 inch pieces
  • 1 stick butter
  • 8 Gloves garlic,chopped

Directions
  1. Preheat oven to 400 degrees
  2. Fry the bacon in a large skillet until crisp
  3. Remove with a slotted spoon and set aside leaving the fat in the skillet
  4. Season the chicken with salt and pepper
  5. Dust lightly with the flour ( I use a ziplock bag)
  6. Cook the chicken in the rendered bacon fat over high heat but be careful not to scorch Yikes!
  7. Brown on all sides
  8. Remove chicken pieces to an oven proof platter and keep warm
  9. Add the ham and yellow onions tothe skillet that you browned the chicken in
  10. Saute until the onions turn transparaent.
  11. Add the mushrooms.Worcestire sauce and tabassco, and bring it to a boil
  12. After a minute,reduce the heat to maintain a simmer
  13. Pour the oil into a deep skillet the depthof 1 iinch
  14. Fry the potatoes till lightl;y browned
  15. Drain them well and add to the skillet with the ham and onions.
  16. This is the Bomnne Femme " Garnish"
  17. Continue simmering the garnish until all of the liquid absorbed ,lightly stir to distribute the ingredients.
  18. Remove from fire
  19. Heat the butter in a small sauce pan until it starts to bubbling
  20. Lower the heat skim the foam off and add the garlic.
  21. Cook the garlic in the hot butter for almost a minute then add to the Bonne Femme Garish
  22. Spoon the Bonne Femme overand between the chicken pieces
  23. Season to taste with salt and pepper.
  24. Crumble the bacon over the top
  25. Bake for 10 to 12 minutes.
  26. Turn the chicken pieces ,redistribute the "garnish"
  27. If the white meat is done the first remove from the platter.
  28. Continue cooking the thighs and the rest of the dark meat till done
  29. Remove and pour any remaining "garnish" over the chicken and Relax Its done and its a feast fit for a King!!!!!

Do you spoon the garlic into the garnish or do you drizzle it onto the chicken beforehand?
This recipe looks amazing, I'm sorry to say that I'd have to omit the mushrooms to make this one in my house. I absolutly love them butI know that no one would eat the dish if they were in there. :(


Asheats don't use the mushmrooms and Step 22 refers to sauted galic.. The only thing to remember is not too burn garlic as it will make the whole dish rancid YUK

Thanks. I needed the positiveinput after a week of a tough Rump Roast which almost broke the electric knife and a Pork roast that fell apart. LOL


Feast for a king! and that it is, Delta, simply wonderful and very 'european'. but then, you do come from an area where people of so many countries mix making the food you serve to vaired and wonderfully tasty! i enjoy eating poultry and am grateful for finding this famous woudnerful recipe here. Thank you for sharing.
