Oven Dried Tomatoes

- 5 large ripe tomatoes, halved vertically shopping list
- 2 T extra virgin olive oil shopping list
- 1 T balsamic vinegar shopping list
- salt and pepper shopping list
How to make it
- Oven @ 200F. I prefer the convection setting.
- Combine the olive oil and vinegar in a bowl. Add the tomato halves and turn to coat. Season with salt and pepper.
- Place the tomatoes cut side up on a wire rack set in a baking pan. (I use my toaster oven).
- Cook the tomatoes for 4-5 hours or until they have shrunk by 2/3. You want to have some moisture left in the tomato. About every hour turn the pan so that the drying occurs evenly.
