How to make it

  • Oven @ 200F. I prefer the convection setting.
  • Combine the olive oil and vinegar in a bowl. Add the tomato halves and turn to coat. Season with salt and pepper.
  • Place the tomatoes cut side up on a wire rack set in a baking pan. (I use my toaster oven).
  • Cook the tomatoes for 4-5 hours or until they have shrunk by 2/3. You want to have some moisture left in the tomato. About every hour turn the pan so that the drying occurs evenly.

    This is great sliced over pasta, as antipasti with bread, or diced up and used wherever you'd use tomatoes.
