Got this out of the newspapaer and made for the game...Was a huge hit.

Ingredients
  • 1 1/2 cups beef broth
  • 1 envelope dry onion soup mix
  • 1 tsp. cumin
  • 1-2 tsp. chili powder*
  • 1/2-1 tsp. crushed red pepper*
  • 1/2 tsp. black pepper
  • 1/2-1 large jalapeno seeded and diced*
  • 1 medium tomato, chopped
  • 3 lbs. bottom round roast, cut into bite size pieces
  • 3 tbls. veg. oil ( I used canola)
  • 1/2 cup flour
  • * Add as much or as little as you like according to your taste...I went spicy

Directions
  1. Put 1 cup broth and next 7 ingredients in crock pot and turn to high.
  2. Dredge meat in flour and in a large skillet put 2 tbls oil and brown meat in batches.
  3. Add meat to slow cooker
  4. Put 1/2 cup broth in skillet and scrape up bits.
  5. Add to slow cooker
  6. Reduce heat to low and cook 8-10 hours
  7. I served this over rice and garnished with sour cream.

Sounds easy and delicious - and hearty. And I am really getting back into slow cooker cooking again. It's just so convenient to have a meal simmering away and ready at the end of the day. Thanks for the recipe. I'm bookmarking it to try soon. =)

Mmmm Just stumbled upon this Wynne. I happen to have a couple round roasts in the freezer, will definitely be doing this to one of 'em. Printing..... ;')


Made this today using a cross-rib roast, what I had. Just finished eating and we are full! Had it over rice with some shredded cheddar on top with cilantro. Very good. I have a ton of leftovers and am already thinking of the re-inventing... Forgot to take a pic. Although mine was more like shredded than cubed because of the roast. Only thing I did different was instead of the chopped tomato, I added two cans of El Pato hot tomato sauce with jalepenos. Also added the jalepenos too. We like it SPICY! Used chipotle chile powder. Very good, will be doing again - so many possiblilities! Thanks for sharing, Wynne. High 5!

Oh, this sounds wonderful and something that Olivia and I could come home too after a long day sitting you know where.....I'm pulling some beef from the deep freeze now.


Great crockpot recipe! We switched the jalapenos out for some mild green chilies....reduced the cumin, crushed red pepper and chili powder seasonings just a bit...Turned out great!!
