Made this today using a cross-rib roast, what I had. Just finished eating and we are full! Had it over rice with some shredded cheddar on top with cilantro. Very good. I have a ton of leftovers and am already thinking of the re-inventing... Forgot to take a pic. Although mine was more like shredded than cubed because of the roast. Only thing I did different was instead of the chopped tomato, I added two cans of El Pato hot tomato sauce with jalepenos. Also added the jalepenos too. We like it SPICY! Used chipotle chile powder. Very good, will be doing again - so many possiblilities! Thanks for sharing, Wynne. High 5!

Great crockpot recipe! We switched the jalapenos out for some mild green chilies....reduced the cumin, crushed red pepper and chili powder seasonings just a bit...Turned out great!!
