Maple Wholewheat Pancakes

- 1 1/2 cups whole wheat flour shopping list
- 1/2 cup all purpose flour shopping list
- 3 teaspoons baking powder shopping list
- 3/4 teaspoon salt shopping list
- 1 3/4 cups milk shopping list
- 1/3 cup maple syrup shopping list
- 1 large egg shopping list
- 1/4 cup butter or margarine, softened shopping list
How to make it
- Combine the whole wheat flour, all purpose flour, baking powder, and salt in a large bowl.
- Whisk to blend thoroughly.
- In a separate bowl, whisk together the milk, maple syrup, egg, and the melted butter.
- Make a well in the dry ingredients and pour in the egg mixture.
- Stir until well moistened.
- The batter will contain some lumps.
- Set the batter aside.
- Place griddle over medium heat.
- Brush the surface with vegetable oil or rub with a strip of uncooked bacon as the griddle warms.
- When the griddle is hot, stir the batter, adding more milk if necessary to create a consistency like thick heavy cream.
- Since the batter is thick only take up about 1/4 cup of the batter when pouring onto the hot griddle.
- Cook until the bubbles that have formed around the outside edge are broken.
- Turn pancakes over and cook the other side.
- Stir in additional milk as needed to maintain a pourable consistency.
