How to make it

  • Combine the whole wheat flour, all purpose flour, baking powder, and salt in a large bowl.
  • Whisk to blend thoroughly.
  • In a separate bowl, whisk together the milk, maple syrup, egg, and the melted butter.
  • Make a well in the dry ingredients and pour in the egg mixture.
  • Stir until well moistened.
  • The batter will contain some lumps.
  • Set the batter aside.
  • Place griddle over medium heat.
  • Brush the surface with vegetable oil or rub with a strip of uncooked bacon as the griddle warms.
  • When the griddle is hot, stir the batter, adding more milk if necessary to create a consistency like thick heavy cream.
  • Since the batter is thick only take up about 1/4 cup of the batter when pouring onto the hot griddle.
  • Cook until the bubbles that have formed around the outside edge are broken.
  • Turn pancakes over and cook the other side.
  • Stir in additional milk as needed to maintain a pourable consistency.

    These might be heavy but between the flavor of the maple syrup and the "heaviness" these must leave you stoked for the morning and content like a purring cat.
