Chile Relleno Casserole With Ground Beef Recipe
This is a little bit of work, but well worth the effort. A twist to the traditional chile relleno!

Ingredients
  • 2 (7oz.) cans Ortega chiles
  • 1 lb. cheddar cheese, grated
  • 1 lb. Jack cheese, grated
  • 1 lb. ground sirloin
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • ½ teaspoon ground cumin
  • salt and pepper to taste
  • 1 or 2 small cans chopped black olives
  • 4 eggs
  • 1 small can of evaporated milk
  • 3 Tablespoons flour
  • 1 small can tomato sauce
  • 1 (7-oz.) can chile salsa

Directions
  1. Saute ground beef with onion and garlic. Set aside.
  2. Remove seeds and flatten chiles.
  3. Layer in a 9x13-inch casserole dish: chiles, cheese,
  4. cooked ground beef mixture,and olives.
  5. Top with a layer of Jack cheese.
  6. Separate 4 large eggs.
  7. Beat egg whites until stiff.
  8. Beat egg yolks and add milk, flour, salt and pepper.
  9. Fold egg yolk mixture into stiff egg whites.
  10. Pour over chilies, cheese, ground beef.
  11. Bake 1 hour at 350 degrees F.
  12. Remove from oven for a minute.
  13. Mix together tomato sauce and chili salsa.
  14. Pour over top and bake ¼ hour longer

Oh, yeah - I am saving this to try soon. I am a big lover of chile rellenos and this recipe sounds wonderful. Great post, Conner! =)


Chile rellenos are my favorite Mexican food! Sometimes I make them with ortega green chiles and sometimes with poblano chiles....anyway they're fixed, I like them best with a think breading 'cause I like to taste the flavor of the chile!


I wish I didn't shy away from cooking anything that sounds Mexican because I just love the food! This recipe is a MUST TRY for me and I can't wait =D


Ok, I meant thin breading, not think breading!
