My Homemade Unic Chilaquiles Recipe
This dish is not expensive it is tasteful and not hard to make. It is rich in flavor and a delicious breakfast or even dinner.

Ingredients
  • 20 individual corn tortillas
  • 10 Green Tomatillos
  • 5 Paste Tomatoes make sure the color is truly red (not the big tomatoes)
  • 1 Jalapeño (add more if you like spicy)
  • 2 Cayenne Chiles (not powder)
  • 1/2 of an onion
  • 1 cup of Cilantro
  • 3 cups of oil
  • 3 Cups of shredded Monterrey Jack cheese
  • 1 Avocatodo thinly sliced
  • Sour Cream
  • Knorr Mexican Chicken powder stock or cubes.

Directions
  1. Heat the oil in a deep frypan.
  2. Cut the tortillas in squares about the size of an inch or bigger if you like.
  3. Deep fry tortillas until they are crispy, remove and place them on a sheet of paper towels to remove oil excess.
  4. Preparing the sauce: boil together the green tomatillos, paste tomates, onion, jalapeño, cayenne chiles. Once cooked remove the skin from the tomatoes only.
  5. Blend all sauce ingredients and add Knorr Mexican chicken powder to taste and some of the water where you boiled the ingridients. Once it is blended add the cilantro and blend again until it looks finely chopped. Make sure that the sauce is not watery.
  6. Remove the oil from frying pan and make sure that the pan is warm/hot and add the tortillas then add the sauce first and softly stir then the add the cheese do not stir then cover. Turn of the stove, if you like your chilaquiles hard and saucy then let them simmer for 1 to 2 minutes and serve. If you like them soft and dry then let simmer a few minutes more. Once you serve them, add the sour cream and avocado on top.
  7. If you like you can top with anything from shredded chicken breast ,beef or eggs.
  8. You can also add a side of re-fried beans mmm.
  9. ENJOY =)

This looks like the breakfast I had years ago at the Princess Hotel in Acapulco. It was served with fresh salsa. I loved it. I will have to try this.
