How to make it

  • In a skillet heat oil to medium high, add chicken and brown on all sides, add onion and garlic, Brown til chicken is cooked. Add Jalepeno, cheese, sour cream and chipole pepper. Salt and pepper to taste. Mix til cheese is melted. Take equal portions and wrap this filling in tortillas, placing them in casserole dish. Cover and put aside.
  • Sauce
  • heat oil and add flour and chili powder, cook for 1 minute
  • add remaining ingredients, bring to boil and simmer for 10 minutes.
  • (or buy a good sauce from a mexican grocer)
  • Pour sauce over enchiladas, top with some mozzerella cheese. cover and bake at 400 degrees for 30 minutes. Place on a bed of Spanish rice, and top with a dolloop of sour cream and chopped green onions

    I'm not very experienced with Mexican cuisine. I do love enchiladas, though. This recipes looks like a winner and it will be my first foray into homemade Mexican cuisine.
