Creamy Dreamy Chicken Enchiladas

- 4 chicken breasts, boneless and skinned, cut into small bite size cubes shopping list
- 1 onion diced shopping list
- 2 cloves garlic diced shopping list
- I jalepeno pepper diced shopping list
- 1 cup of mozzarella cheese shopping list
- 1/2 cup sour cream shopping list
- 1 tsp chipole powder shopping list
- 8 tortillas shopping list
- 2 tbs oil shopping list
- salt and pepper shopping list
- Sauce shopping list
- 2 tablespoons vegetable oil shopping list
- 2 tablespoons all-purpose flour shopping list
- 2 tablespoons chili powder shopping list
- 1/2 teaspoon ground cumin shopping list
- 1 (8-ounce) can tomato sauce shopping list
- 2 cups water shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon garlic powder shopping list
How to make it
- In a skillet heat oil to medium high, add chicken and brown on all sides, add onion and garlic, Brown til chicken is cooked. Add Jalepeno, cheese, sour cream and chipole pepper. Salt and pepper to taste. Mix til cheese is melted. Take equal portions and wrap this filling in tortillas, placing them in casserole dish. Cover and put aside.
- Sauce
- heat oil and add flour and chili powder, cook for 1 minute
- add remaining ingredients, bring to boil and simmer for 10 minutes.
- (or buy a good sauce from a mexican grocer)
- Pour sauce over enchiladas, top with some mozzerella cheese. cover and bake at 400 degrees for 30 minutes. Place on a bed of Spanish rice, and top with a dolloop of sour cream and chopped green onions
