Ingredients
  • 4 chicken breasts, boneless and skinned, cut into small bite size cubes
  • 1 onion diced
  • 2 cloves garlic diced
  • I jalepeno pepper diced
  • 1 cup of mozzarella cheese
  • 1/2 cup sour cream
  • 1 tsp chipole powder
  • 8 tortillas
  • 2 tbs oil
  • salt and pepper
  • Sauce
  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder
  • 1/2 teaspoon ground cumin
  • 1 (8-ounce) can tomato sauce
  • 2 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder

Directions
  1. In a skillet heat oil to medium high, add chicken and brown on all sides, add onion and garlic, Brown til chicken is cooked. Add Jalepeno, cheese, sour cream and chipole pepper. Salt and pepper to taste. Mix til cheese is melted. Take equal portions and wrap this filling in tortillas, placing them in casserole dish. Cover and put aside.
  2. Sauce
  3. heat oil and add flour and chili powder, cook for 1 minute
  4. add remaining ingredients, bring to boil and simmer for 10 minutes.
  5. (or buy a good sauce from a mexican grocer)
  6. Pour sauce over enchiladas, top with some mozzerella cheese. cover and bake at 400 degrees for 30 minutes. Place on a bed of Spanish rice, and top with a dolloop of sour cream and chopped green onions

I'm not very experienced with Mexican cuisine. I do love enchiladas, though. This recipes looks like a winner and it will be my first foray into homemade Mexican cuisine.
