Ingredients
  • Neapolitan Marriage Soup
  • Makes 21/2 quarts
  • FOR THE MEATBALLS:
  • 1/3 pound ground pork
  • 1/3 pound ground veal
  • 1/3 pound ground beef
  • 1 large egg
  • 1/2 cup freshly grated Pecorino Romano cheese, plus additional for garnish
  • 2 tablespoons chopped fresh Italian parsley
  • 2 garlic cloves, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper flakes
  • FOR THE SOUP:
  • 8 cups chicken stock or broth
  • 1 bunch escarole, trimmed and chopped
  • 1/4 cup freshly grated Pecorino Romano cheese
  • Kosher salt and freshly ground black pepper

Directions
  1. 1. Preheat the oven to 375 degrees. Lightly grease a baking sheet.
  2. 2. To make the meatballs: Place the meats, egg, cheese, parsley, garlic, salt and red pepper flakes in a mixing bowl and, using your hands, mix thoroughly until well-combined. Take a piece of the meat mixture about the size of a large grape, press your hands together, and gently roll the mixture into a meatball about 1 inch across. Place on a prepared baking sheet and repeat with the remaining meat mixture. Transfer the baking sheet to the oven and bake until the meatballs are crunchy and browned, turning once, 20-25 minutes. Set aside.
  3. 2. To make the soup: Place the chicken stock in a 6-8 quart stockpot and bring to a boil over medium-high heat. Add the escarole and cook until tender, about 10 minutes. Using a slotted spoon, gently drop in the meatballs. Reduce the heat to low and cook until they have flavored the broth, about 15 minutes.
  4. 3. Just prior to serving, add the cheese. Add salt and pepper to taste and stir well. Ladle into bowls and serve.

What a great post for a cold winter day! Thanks.

This looks great... before I try it, I have a question::: Will it make me want to get married? Important info here...lol.... thanks for the post.

I love Wedding Soups! Thank You! :)

This is by far one of my favorite soups. Fabulous pic too. Only criticism, a "marriage" soup is a marriage or a combining of ingredients. Nothing to do with weddings. "Italian Wedding Soup" is a mistranslation from Italian to English.
