Ingredients

How to make it

  • Heat lentils in microwave or over stovetop until very warm, and pour into a large bowl.
  • Combine the remaining ingredients in a small bowl.
  • Pour the dressing over the lentils and stir the whole thing carefully until all the ingredients are evenly combined.
  • Taste, and add a little extra salt or pepper if needed.
  • Cover and chill for 6-7 hours to allow the flavours to combine.
  • Yields just over 3/4 cup per serving

    Sounds delicious. I love new things to do with lentils--they are so tasty and nutritious--and anything with 1/4 cup of fresh lime juice can't be bad!

    Lovely and healthy. I love legumes and lentils are my favorite. I like it hot in soups and stews as well as cold in salads. Would try this recipe very soon, and I´ll follow your suggestion and add some bulgur or even cooked couscous with it. I also think maybe a little drizzle of extra virgin olive oil over the top when ready to eat would be nice too. Thanks.

    I use the micro, ivy, so I don't usually. If you are doing it on the stove add enough so they dont burn, then drain them before continuing.
