Love how the dressing slightly wilts the spinach

Ingredients
- Salad
- 1 lb. baby spinach
- Dressing
- 1 strip center cut bacon, chopped
- 1/3 cup shallot, thinly sliced
- 1/4 cup red wine vinegar
- 2 tbls. honey
- 1/2 tsp. dry mustard
- Cracked pepper to taste
Directions
- Cook bacon until crisp
- Remove bacon from pan and drain on paper towel
- in bacon drippings, add shallot and cook until tender
- Stir in remaining ingredients
- Bring to a boil
- Serve immediately over spinach
- Sprinkle with bacon pieces

Sounds like a way I could get my husband to eat spinach. I love it fixed anyway, but he is not fond of it at all, think he wouldn't even guess it was spinach fixed this way and eat his little heart out with it fixed like this. You have my 5 also.
