Ingredients
  • 1 lb lean ground beef
  • 1 tablespoon olive oil or salad oil
  • 1 small green pepper, chopped
  • 1 cup chopped fresh celery
  • 1 small onion, chopped
  • 1 can (16o) whole tomatoes
  • 1/4 cup yellow cornmeal
  • 2 pkgs. (10oz each) frozen whole kernel corn
  • 1 can (4oz ) chopped green chilies
  • 2 eggs, slightly beaten
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 to 3 teaspoons chili powder
  • 4 oz. (1/4 lb.) Monterey Jack cheese, shredded
  • Sliced black olives and fresh avocado for garnish

Directions
  1. Preheat oven to 375.F
  2. In a large frying, saute the ground beef in the oil. Add the green pepper, celery, and onion. Cook until beef loses its pinkness and onion is limp.
  3. Turn into a large mixing bowl. Stir in the tomatoes with liquid, breaking them up into pieces. Add cornmeal and whole kernel corn. Stir to blend well. Stir in the eggs.
  4. Add salt, pepper, and chili powder.
  5. Turn into greased 2-quart deep casserole with lid (or cover with foil).Cover. Bake for 45 minutes or until casserole is set.
  6. Sprinkle with cheese. Cover and bake until cheese melts.
  7. Garnish with sliced olives and avocado.

Love any kind of Mexican food and this looks and sounds like a winner. Could you use Masa in place of the Corn Meal? Just wondered since I always have some around. Thanks for your post.


Very nice and quite easy too. Loved the flavors, but I tweaked mine to add a little more heat, but it was still mild enough for the wimpy hubby. Thanks for a great addition to our week night meals.
