Tamale Casserole

- 1 lb lean ground beef shopping list
- 1 tablespoon olive oil or salad oil shopping list
- 1 small green pepper, chopped shopping list
- 1 cup chopped fresh celery shopping list
- 1 small onion, chopped shopping list
- 1 can (16o) whole tomatoes shopping list
- 1/4 cup yellow cornmeal shopping list
- 2 pkgs. (10oz each) frozen whole kernel corn shopping list
- 1 can (4oz ) chopped green chilies shopping list
- 2 eggs, slightly beaten shopping list
- 1 1/2 teaspoons salt shopping list
- 1/4 teaspoon pepper shopping list
- 1 to 3 teaspoons chili powder shopping list
- 4 oz. (1/4 lb.) monterey jack cheese, shredded shopping list
- Sliced black olives and fresh avocado for garnish shopping list
How to make it
- Preheat oven to 375.F
- In a large frying, saute the ground beef in the oil. Add the green pepper, celery, and onion. Cook until beef loses its pinkness and onion is limp.
- Turn into a large mixing bowl. Stir in the tomatoes with liquid, breaking them up into pieces. Add cornmeal and whole kernel corn. Stir to blend well. Stir in the eggs.
- Add salt, pepper, and chili powder.
- Turn into greased 2-quart deep casserole with lid (or cover with foil).Cover. Bake for 45 minutes or until casserole is set.
- Sprinkle with cheese. Cover and bake until cheese melts.
- Garnish with sliced olives and avocado.

Very nice and quite easy too. Loved the flavors, but I tweaked mine to add a little more heat, but it was still mild enough for the wimpy hubby. Thanks for a great addition to our week night meals.
