Halibut Braised With Tomatoes Capers And Olives

- 2 tsp olive oil shopping list
- 1 onion, chopped shopping list
- 2 garlic cloves, minced shopping list
- 2 celery stalks, chopped shopping list
- 1 tsp fennel, lightly crushed shopping list
- 1 (14.5 oz.) can crushed tomatoes shopping list
- 1 3/4 Cups water shopping list
- 1 Cup dry orzo (about 6 oz) shopping list
- 12 pitted kalamata olives, halved shopping list
- 1 Tbl capers, or to taste shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp freshly ground pepper shopping list
- 1 1/4 lbs halibut, skin removed shopping list
How to make it
- Heat oil in a 10 inch non-stick skillet over medium high heat.
- Add onion and garlic, cook until fragrant, about 1 minute; add the chopped celery and the fennel seeds and cook, stirring occasionally until slightly softened and fragrant, about 2 minutes
- Stir in tomatoes, water, orzo, olives, capers,1/4 tsp of the salt and 1/8 tsp of the pepper
- Bring to a boil, stirring occasionally.
- Reduce the heat and simmer, covered 5 minutes
- Season the halibut with the remaining salt and papper
- Add the halibut to the skillet, spooning some of the tomato mixture over the fish
- Cook and simmer until fish is opaque and orzo is tender, 10-12 minutes
