Rice Pancakes Recipe
This recipe can easily be doubled to make four servings. While cooking, they smell like popcorn! A delightful treat for big kids and little ones too. From, Not on Love Alone.

Ingredients
  • 1 Egg
  • 1 1/2 C cooked Rice (such as leftover Chinese take-out rice)
  • small pinch of Kosher Salt, optional
  • 1 Tbl. unsalted Butter, plus more for serving
  • Maple Syrup

Directions
  1. Beat egg lightly in a medium-size bowl.
  2. Add rice and squish with fork to combine.
  3. Add the pinch of salt if desired.
  4. Heat a non-stick skillet over medium-high flame, and melt butter.
  5. Add rice in large spoonfuls and press them down a bit so they resemble pancakes. Cook 3 to 4 minutes a side until lightly golden.
  6. Bathe pancakes in maple syrup (and a pat of butter, if you like.)

I sent this to my daughter her 5 year old has wheat and milk allergies and these have neither and sound good too. thanks


What a great idea for using leftover rice. I can see my rice loving husband making extra rice just to have these. They're also a great idea for those with allergies to wheat, as was mentioned by Cheryilyn.
