How to make it

  • Beat egg lightly in a medium-size bowl.
  • Add rice and squish with fork to combine.
  • Add the pinch of salt if desired.
  • Heat a non-stick skillet over medium-high flame, and melt butter.
  • Add rice in large spoonfuls and press them down a bit so they resemble pancakes. Cook 3 to 4 minutes a side until lightly golden.
  • Bathe pancakes in maple syrup (and a pat of butter, if you like.)

    What a great idea for using leftover rice. I can see my rice loving husband making extra rice just to have these. They're also a great idea for those with allergies to wheat, as was mentioned by Cheryilyn.
