Ingredients
  • 8 Round Flour Tortillas
  • 2 Tbspns Vegetable Oil
  • 2 Scallions, sliced
  • 1 Hass Avacado, diced
  • 2 Cups Leftover Chili
  • 2 1/2 cups shredded Cheddar or Mexican blend cheese
  • Fresh Spinach
  • Garlic powder
  • Chili powder
  • Ciliantro, fresh or dried
  • Pepper
  • Lime Juice
  • Sour Cream
  • A whole BOATLOAD of Frank's Redhot Sauce. It's da bomb diggity, yo!!!

Directions
  1. Preheat the oven to 400F.
  2. Heat the oil in a pan and fry up the tortillas, about 2 minutes on each side until crisp.
  3. Put 4 crispy tortillas on a plate and pile with a layer of chili, a layer of cheese, scallions, avacado and sprinkle with ciliantro, garlic, pepper, chili powder and a spritz of lime juice on each. Top with a few spinach leaves and put the remainder of the crispy tortillas, making a sort of sandwich.
  4. Sprinkle the tops with a bit extra cheese, herbs and spices, and put them into the oven to bake at 400F for about 7-10 minutes, or until cheese melts. Top each with a dollup of sour cream and douse to death with hot sauce.
  5. Enjoy them because they rock!!!

Tuesday is 'Taco Tuesday' at our house (or anything Mexican). These UFO's were fantastic! There are so many ways to adjust them to fit any situation, and you are so right about the 'Gobs' of Frank's Hot. Great recipe, we'll have them again.
