How to make it
- Preheat the oven to 400F.
- Heat the oil in a pan and fry up the tortillas, about 2 minutes on each side until crisp.
- Put 4 crispy tortillas on a plate and pile with a layer of chili, a layer of cheese, scallions, avacado and sprinkle with ciliantro, garlic, pepper, chili powder and a spritz of lime juice on each. Top with a few spinach leaves and put the remainder of the crispy tortillas, making a sort of sandwich.
- Sprinkle the tops with a bit extra cheese, herbs and spices, and put them into the oven to bake at 400F for about 7-10 minutes, or until cheese melts. Top each with a dollup of sour cream and douse to death with hot sauce.
- Enjoy them because they rock!!!
