This is probably the national dish of Poland. It is fantastic served steaming on a cold day with some nice crusty bread. Sour and sweet at the same time. One of my favorites. :D

Ingredients
  • 1.5kg sauer kraut or fermented sour cabbage
  • large onion diced
  • 3 cloves garlic diced
  • large cooking apple , peeled, cored and diced
  • 50gr dried mushrooms soaked
  • vegetable bouillon/Vegeta to taste
  • few whole all spice
  • few whole peppercorns
  • some juniper berries (optional)
  • Bay leaves
  • Salt, Pepper to taste
  • a little water
  • Diced smoked sausage (kielbasa in Polish )or equivalent, Ham or Chorizo also works -fried for 5 mins or until browning

Directions
  1. Strain the cabbage with cold water 3 or 4 times to ensure it isn't so sour anymore. Ensure water is fully drained and chop up coursely. Add to heavy sauce pan
  2. Add Garlic ,Onions and Apple ,drained mushrooms,all spice , peppercorns bay leaves etc to pot also
  3. Stew on a low heat with 1 tsp bouillon/vegeta and a little water to stop burning for up to 2 hours
  4. Taste after this time,adding fried meat , add salt, pepper,
  5. Add more bouillon/vegeta if needed but do not oversalt!! The longer this recipe sits and the more often it is reheated the better it will taste as the flavours mix

Recipe looks real good. I used to make homemade sauerkraut but no longer have a garden or a room where it can do it's thing. Now have to buy at the grocery store. (Not as good as homemade!!!!)

I've always wanted to try and make this. (My Dad was Polish). Good tip about rinsing out the sauerkraut first - I like it as it is out the jar, but my husband won't touch it. Maybe this dish will change his mind?

I'll bookmark it to try out when the weather gets cooler! We're roasting here just now!
