Polish Style Hunters Stew Or Bigos

- 1.5kg sauer kraut or fermented sour cabbage shopping list
- large onion diced shopping list
- 3 cloves garlic diced shopping list
- large cooking apple , peeled, cored and diced shopping list
- 50gr dried mushrooms soaked shopping list
- vegetable bouillon/Vegeta to taste shopping list
- few whole all spice shopping list
- few whole peppercorns shopping list
- some juniper berries (optional) shopping list
- bay leaves shopping list
- salt, pepper to taste shopping list
- a little water shopping list
- Diced smoked sausage (kielbasa in Polish )or equivalent, ham or Chorizo also works -fried for 5 mins or until browning shopping list
How to make it
- Strain the cabbage with cold water 3 or 4 times to ensure it isn't so sour anymore. Ensure water is fully drained and chop up coursely. Add to heavy sauce pan
- Add Garlic ,Onions and Apple ,drained mushrooms,all spice , peppercorns bay leaves etc to pot also
- Stew on a low heat with 1 tsp bouillon/vegeta and a little water to stop burning for up to 2 hours
- Taste after this time,adding fried meat , add salt, pepper,
- Add more bouillon/vegeta if needed but do not oversalt!! The longer this recipe sits and the more often it is reheated the better it will taste as the flavours mix

I've always wanted to try and make this. (My Dad was Polish). Good tip about rinsing out the sauerkraut first - I like it as it is out the jar, but my husband won't touch it. Maybe this dish will change his mind?
