Ingredients

How to make it

  • In a saucepan, sweat shallot in a small amount of butter
  • Add Tarragon vinegar and reduce until almost dry
  • Let cool
  • Cook time does not include freezer time
  • With mixer, blend butter, shallot mixture, salt, cayenne, tarragon, and chive until well incorporated
  • Add lobster meat, mixing well
  • Scoop mixture into equal size balls and put in freezer
  • Set up breading station
  • Put flour in a bowl
  • Beat egg and cream together
  • Put bread crumbs in bowl
  • Coat balls in flour, then egg mixture, then bread crumbs
  • Then egg again and then breadcrumbs
  • Return to freezer for 1/2 hour
  • In a deep pot, heat frying oil to 350.
  • Fry until brown and crispy
  • Serve over mashed potatoes

    heck anything that takes a stick of butter... has got to be good - besides "stick of butter" happens to be my middle name! lol What a great recipe here! Oh So Naughty!
