Buttery Lobster Balls

- Meat from 1 1/4 lb. cooked lobster, diced shopping list
- 1 stick butter, softened shopping list
- 1 tbls. fresh tarragon, chopped shopping list
- 1 tbls. fresh chive, chopped shopping list
- 1 cup bread crumbs shopping list
- 1 cup flour shopping list
- 3 eggs shopping list
- 1/4 cup cream shopping list
- 1 shallot, finely chopped and butter to saute shopping list
- 1/2 cup tarragon vinegar shopping list
- salt and cayenne pepper to taste shopping list
- oil to fry shopping list
How to make it
- In a saucepan, sweat shallot in a small amount of butter
- Add Tarragon vinegar and reduce until almost dry
- Let cool
- Cook time does not include freezer time
- With mixer, blend butter, shallot mixture, salt, cayenne, tarragon, and chive until well incorporated
- Add lobster meat, mixing well
- Scoop mixture into equal size balls and put in freezer
- Set up breading station
- Put flour in a bowl
- Beat egg and cream together
- Put bread crumbs in bowl
- Coat balls in flour, then egg mixture, then bread crumbs
- Then egg again and then breadcrumbs
- Return to freezer for 1/2 hour
- In a deep pot, heat frying oil to 350.
- Fry until brown and crispy
- Serve over mashed potatoes
