This is a holiday favorite! A new twist on an old Jewish grandmothers recipe....My family requests at least 3 of these during the holidays! One of my favorites!!!

Ingredients
  • 1 & 3/4 cups sugar, divided
  • 3/4 stick butter, softened
  • 8 ounces reduced or low fat cream cheese, softened
  • 2 large eggs
  • 1 & 1/2 cups all-purpose flour
  • 1 & 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 large ROME apples

Directions
  1. Preheat oven to 350 degrees
  2. Beat 1/2 cup sugar, butter, vanilla and cream cheese @ medium speed for 4 minutes
  3. Add eggs, one at a time, beating well after each addition
  4. Combine flour, baking powder and salt in a separate bowl and mix
  5. Add flour mixture to cream mix beating at a low speed until blended
  6. In small bowl, combine 1/4 cups sugar and cinnamon
  7. Peel and chop apples and place in a med bowl
  8. Add 3 Tablespoons of cinnamon-sugar mix to apples and mix until they are covered completely
  9. Stir apples into batter
  10. Pour batter into an 8" springform pan coated with cooking spray
  11. Sprinkle remaining cinnamon-sugar on top of cake batter
  12. Bake for 1 hour and 15 minutes, or until cake pulls away from both sides of the pan and the center is set
  13. Cool on wire rack and slice a knife around the edge of the pan where cake pulled away
  14. Cut with serrated knife, serve & enjoy!!!!
  15. (If using 9" pan reduce cooking time by 5-7 minutes, depending on oven)

This is superb - just finished a bowl of this. made with my 'Stirling Castle' apples (cooker- eater). Added about 1/4 cup less sugar than stated. Baked in a rayburn oven heated with wood.

Alterations


you can also use fat free cream cheese, or 1/2 splenda-1/2 sugar mixture....for the full flavor try the original recipe first, and test the low-sugar, low fat version before serving it.
