Ingredients

How to make it

  • Bring a large pot of water to a boil
  • Add Lasagna and boil for 8 minutes
  • Add the Asparagus Spears
  • Turn off remove asparagus with a Chinese wire spoon
  • Drain Lasagna and place onto a cookie sheet
  • Slather with Ricotta mixture
  • Lay 3 Asparagus on each Lasagna and roll up
  • Place into a Loaf pan which has been coated with butter
  • cover evenly with Parmesan cheese
  • Cover loaf pans with Foil and bake for 30 minutes covered
  • Remove foil and bake for another 10 minutes
  • SAUCE
  • while Rollotini is baking make the sauce
  • in a sauce pan cook the sliced Mushrooms in two tablespoons of olive oil
  • add a pinch of sea salt and sweat mushrooms until soft
  • Add the butter and the flour
  • Add the Walnut liqueur and the white wine, simmer until sauce thickens.
  • Place a bed of fresh spinach onto plate add the Rollotini and ladle the sauce on top
  • Pour yourself and guest a glass of whine
  • Enjoy

    Wow....you really wowed me with this...ok, I must admit, I have never heard of Walnut liqueur! Is it difficult to find? Yes, I do hear Andrea Bocelli in the background! Ahhhhh!
