This is one of those dishes that everyone asks me to bring to their pot lucks. It is so yummy...this goes great over rice, noodles or even with potatoes. My family and friends love this.

Ingredients
- Make your own meatballs or buy ready made (make your own is better)
- Hawaiian Sauce recipe below is for 3 lbs of meat balls
- Hawaiian Sauce:
- 2 lrg. bottles Russian Dressing
- 1 lrg. can pineapple chunks in own juice
- 2 pkg onion soup mix
- 1 reg size jar of apricot jam (8 oz?)
- 1 bag of baby carrots
- Meatballs
- 3 lbs ground round
- 1 cup bread crumbs
- 3 eggs
- 1 tsp. garlic
- dash of onion powder
- salt and pepper to taste
Directions
- Roll meatballs into golf ball size, boil for 5 minutes drain. (this eliminates a lot of grease)
- Place meatballs into dutch oven
- Par cook baby carrots until tender crisp.
- Mix Russian dressing with onion soup mix, pineapple chunks with juice, apricot jam and par cooked baby carrots.
- Pour over meatballs
- Bake uncovered for 1 hour at 350.

Another one I have to try - I have a Hawiaan meatball recipe that I haven't made in years because it takes forever...this recipe sounds easy and quick and delicious!!
