Ingredients

How to make it

  • Apricot puree
  • Boil apricots in water for about 5 minutes, blend apricots, sugar and water in the blender, “pulsing” for 30 seconds. Until you have the puree.

  • Meat balls
  • In a large bowl mix ground beef, salt, pepper curry powder, onion apricot puree, and eggs. Mix well.
  • Form meat balls and set aside.
  • In a blender, Blend all sauce ingredients and pour into a sauce pan over medium heat, add meat balls, stirring
  • Add dried apricots in pieces and dried dates in pieces…
  • Cook for about 15 minutes.
  • Serve over white rice and sprinkle sliced almonds.

    Wonderful. I love to cook with dates (but not on dates ... I'm married). This a fun and easy recipe, that I'll bet is sweet and savory. Mmmm.
