Ingredients
  • 1-1/4 cups dry kidney beans
  • 1 cup coconut milk
  • 1 sprig fresh thyme
  • 1 teaspoon minced garlic
  • 1/8 cup chopped green onions
  • 1 hot red chili pepper, sliced, and seeded
  • 2-1/4 cups uncooked brown rice

Directions
  1. In a large saucepan, combine beans and coconut milk; cook for 2 hours on low heat.
  2. Stir in thyme, garlic, onions and 2 to 4 slices chili pepper; simmer for 5 to 7 minutes.
  3. Stir in rice and bring to a boil, then reduce heat, cover and simmer for 25 minutes, or until all liquid is absorbed and rice is tender.
  4. Allow to sit for 5 - 10 minutes

I love the brown rice/bean and coconut milk, very much the dish my step dad would love. He lives in the Dominican Republic most of the year and we can never serve him the food he loves from there. This will be the winner. Thanks.
