Ingredients

How to make it

  • In a large saucepan, combine beans and coconut milk; cook for 2 hours on low heat.
  • Stir in thyme, garlic, onions and 2 to 4 slices chili pepper; simmer for 5 to 7 minutes.
  • Stir in rice and bring to a boil, then reduce heat, cover and simmer for 25 minutes, or until all liquid is absorbed and rice is tender.
  • Allow to sit for 5 - 10 minutes

    Obviously no one who commented on this recipe actually tried to make it. There's no way anyone could cook that much beans and rice with that little liquid. You'd have a dry burnt mess. Somewhere along the line several cups of water has to be added. Lousy job checking your work!

    I love the brown rice/bean and coconut milk, very much the dish my step dad would love. He lives in the Dominican Republic most of the year and we can never serve him the food he loves from there. This will be the winner. Thanks.
