Sweet Potato Surprise Cake Recipe

Ingredients

1 1/2 cup cooking oil

2 cup sugar

4 eggs

4 tablespoons hot water

1/4 teaspoon salt

2 1/2 cup sifted cake flour

1 teaspoon nutmeg

1 cup raisins

1 1/2 cup grated raw sweet potatoes

1 cup chopped nuts

1 teaspoon vanilla

1 teaspoon ground cinnamon

3 teaspoon baking powder

Directions

Combine cooking oil and sugar; beat until smooth

Add egg yolks; beat well

Add hot water, then dry ingredients( make sure they have been sifted together before adding)

Stir in potatoes, nuts, and vanilla; beat well

Beat egg whites until stiff and fold into mixture

Bake at 350 degrees for 25 to 30 minutes

Makes 4 layers

Cool and add frosting if desired
